Russian nutrition expert Dr. Olga Kurabliova announced that it is not advisable for individuals with liver problems, stomach ulcers, and intestinal inflammation to consume carrots. The expert stated in an interview with the Russian news agency Novosti that while carrots are beneficial for skin, heart, and cardiovascular health, and help with weight loss, they should be avoided if there are liver issues. She remarked that if there are health problems in the liver, it will not be able to absorb carotene. Other health issues that prevent carrot consumption include stomach or intestinal ulcers and inflammation of the intestinal walls.
Dr. Kurabliova also mentioned that when selecting carrots, they should not be soft, smooth, or have spots and cracks, as these signs indicate damage to the flesh. Carrots are a good source of beta-carotene, a natural pigment that the body uses to produce vitamin A, and they contain a good amount of fiber. Raw carrots help resolve constipation daily and also assist in maintaining healthy cholesterol levels and preventing heart diseases. Carrots are root vegetables, and while orange is the most common color, they also come in other colors, including purple, yellow, red, and white.
