An Australian nutritionist shared her simple recipe for preparing stuffed sweet potatoes in just minutes. Jessica Siebel from Sydney revealed her nutritious recipe, beginning with digging out 4 sweet potatoes and drizzling them with olive oil. She then places the potatoes on a baking tray in a preheated oven and lets them cook for about an hour until they become tender.
To prepare the tuna filling, Jessica combines two 95-gram cans of tuna with half a cup of Greek yogurt, a tablespoon of capers, a cup of basil, garlic, and mint, two teaspoons of mustard, and the zest of half a lemon. She mixes the ingredients together before seasoning with salt and black pepper.
For the cottage cheese flavor, Jessica divides the cottage cheese between halves of the sweet potatoes, then adds half a mashed avocado mixed with lemon juice, salt, and pepper, along with 10 cherry tomatoes and half a handful of chopped chives.
Once the potatoes are fully cooked, Jessica lets them cool in the tray for 10 minutes. After they cool, she cuts the potatoes in half and scoops out a bit of the flesh from the center, filling them with both flavors, and serves the potatoes hot, according to the Daily Mail.
