One of Australia’s top chefs has revealed his best tips for cooking fish. The famous Australian chef Josh Niland, from Sydney, shared numerous tips and tricks for cooking and preparing fish with the Daily Mail Australia, as follows:

**Do Not Wash the Fish**

Niland says the biggest secret to preparing fish at home is not to wash it. If you have bought a fish that has been washed, place the fillets on a special rack and put them in the refrigerator uncovered for at least 4-5 hours to allow the skin to dry slightly so that it becomes tender and crispy when fried.

**Remove the Glassy Layer from the Eye**

Niland mentions that removing the glassy layer from the fish's eye helps to give the fish a fresh taste that we haven't experienced before.

**Cook the Fish on One Side Only**

Niland advises cooking the fish on one side only and not flipping it until the other side is cooked, as this allows the heat to gradually reach all parts of the fish and makes the skin crispy and golden. The chef revealed that cooking the fish on both sides leads to dry meat, so using the skin as protection helps to prevent this.
