Dr. Antonina Starodubova, a Russian nutrition expert, announced that the consumption of vegetables and leafy greens from the cabbage family (cruciferous vegetables) helps in preventing bowel cancer. The chief nutritionist from the Ministry of Health in Moscow states, "According to the results of recent studies, it has been found that eating vegetables and leafy greens from the cruciferous family—such as cabbage in its various forms, cauliflower, broccoli, radishes, turnips, and arugula—helps prevent colon and rectal cancer because they are high in polyphenols and dietary fiber." She adds that the biological significance of this pigment found in brightly colored vegetables and fruits lies in its antioxidant properties, meaning it protects the body's cells from damage.
