Japanese nutrition expert Masahiro Iwasaki revealed the types of vegetables that lower harmful cholesterol levels in the blood. He stated, "All vegetables contain various powerful antioxidant compounds. One of these compounds is capsanthin, found in red peppers and chili peppers, which gives them their red color." The expert emphasizes that "this compound is a strong antioxidant, and studies have shown that capsanthin raises good cholesterol levels in the blood and lowers harmful cholesterol levels." It is also known that red peppers have a high vitamin C content, equal to double that of lemons, which also helps in lowering harmful cholesterol levels.
