The breakdown of this substance leads to the release of hydrocyanic acid. Furthermore, almonds should be slightly dried, and frying them at high temperatures is not recommended to preserve their beneficial properties.

Next is raw peanuts, which pose health risks as they can cause digestive disturbances and allergies. However, after roasting, the level of beneficial polyphenols increases by 20-25 percent. Raw cashews are also dangerous as they contain the toxic oil urushiol, which can cause contact dermatitis and itching. People with urushiol intolerance should not consume this nut raw, as even a small amount can be fatal. Meanwhile, roasted cashews are healthy.

Experts affirm that during roasting, the unsaturated fatty acids present in nuts, which are responsible for maintaining blood pressure levels and aging processes, are destroyed. Therefore, it is essential to monitor the roasting process. It is noted that the lower the temperature used, the less destruction of beneficial health properties occurs.

It is important to understand that the beneficial properties of nuts vary by type; for example, almonds are high in dietary fiber, protein, vitamin E, unsaturated fats, and antioxidants, while hazelnuts contain manganese and copper.
